Banana Almond Butter Ice Cream Recipe

Updated: Aug 3, 2022

Banana Almond Butter Ice Cream was calling our name and we couldn't risk going to the store for a sweet treat due to the COVID-19 situation, so we had to get a little creative. So, what we came up with was: Banana Almond Butter Ice Cream! And it was amazing so we thought we'd share the recipe. We aren't chefs here, but this sure tasted good! You'll also notice in the recipe items we call for a generous tablespoon of Almond Butter. That's us using a regular kitchen spoon and just scooping out however much came with the spoon. We did that twice, cause why not.

We also did this recipe a little discombobulated. We added the cacao nibs and crunchy peanut butter after we blended it because they were delicious last decisions. But, as we say below, you can add those ingredients in the beginning if you want. We also prefer the extra crunch without blending them into small pieces, so that's also why we added them in last. The peanut butter adds a little more salty flavor too which is why we only add a little bit. It also gives the flavor profile a little pop!

brown banana's for ice cream

Here's what we'll need for this delicious recipe:

  • 2 Frozen Bananas

  • 1/4 Cup Almond Coconut Milk (or whatever milk you choose)

  • Generous Table Spoon of Crunchy Almond Butter (or two)

  • Not That Generous of a Table Spoon Crunchy Peanut Butter

  • Pinch of Sea Salt

  • 1/8 Cup Cacao Nibs

  • 1 Table Spoon of Cacao Powder

Banana Ice Cream – Step One:

Allow the bananas to ripen before peeling them. Once they have some or many brown spots on them, go ahead a peel them and chop into smaller pieces. Once you finish that, stick them into a container and place it into the freezer. The browner the banana the sweeter it will be. Use your own discretion and taste preference here but we like brown spots here.

Banana Ice Cream - Step Two:

Once your bananas are frozen go ahead and toss them into your food processor or blender. We also added in some Coconut Almond Milk to help it blend up a little better. You can add up to about 1/4 cup and of course, you can choose whatever milk you like. You can also go ahead and add in both your almond and peanut butter. It's also a good time to add a pinch of salt, cacao powder, and cacao nibs.

Remember this important tip: Scoop with a regular kitchen spoon however much you want! We did generous scoops. Haha

Our Blender Preference: We have used a Vitamix for ten years now and it works awesome! Well worth the money in our opinion.

Banana Ice Cream - Step Three:

Blend until a smooth texture has been reached. For the Vitamix, we blended on level 4 for a couple of minutes and it worked out great. Now, you can either throw this mixture into a bowl and eat it now or throw it back into the freezer for like 30 minutes to get it a little more cold and frozen.
